The Michelin Guide Italy 2017 has once again bestowed their prestigious star to La Preséf de La Fiorida di Mantello (SO)
For the fourth consecutive year the recognition is a crowning moment for the continuing project of taste, health and quality, established through the brigade under the supervision of Executive Chef Gianni Tarabini, promoting the potential of a genuinely short supply chain developed entirely within the holiday working farm complex in Valtellina and neighbouring Lario.
2013 saw the awarding of the very first Michelin star to La Preséf, a veritable treasure trove of flavours overseen by Chef Gianni Tarabini within the Holiday Working Farm Complex La Fiorida, in Valtellina.
The recognition represents the very first and indeed only occasion that a restaurant associated with a farm complex has received an accolade of this nature. It’s a uniqueness which, ever since, has encouraged giving full rein to the philosophy profoundly rooted in territory, tradition, passion and creativity out of which was hatched the radical project that is La Fiorida, which rewards customers first and foremost with taste, health and quality. And all contained within a natural, spontaneous and creative expression.
And nothing has changed in that particular sphere. Today Chef Gianni Tarabini, his ever-faithful brigade and all personnel at La Preséf continue to promote this splendid demonstration of the genuinely short supply sourcing, entirely developed within the farm itself; from stable, field, vegetable plots, dairy and the in-house cured meat production, but also happily incorporating local producers of typical and characteristic specialities, all based in the area between Valtellina and Lake Como which La Fiorida finds so accommodating.
It’s an engaging choice which allows it to give more than a touch of personality, freshness and originality to the day’s menu. Naturally, and rigorously inspired by each changing season.
Hence this, the fourth consecutive recognition from Michelin to La Présef, should be an award to be shared with the surrounding territory itself.
Not an objective reached for its own sake, more a robust setting off point which takes very seriously the heritage of the entire region and takes great pleasure in expressing its appreciation through some remarkable flavours.
A star not afraid to shine brightly, drawing energy from the deepest of roots, sunk into Valtellina’s earth and with sources close to La Fiorida’s very heart.
