THE STAR THAT LA PRESÉF REPRESENTS WILL SPARKLE BY CANDLELIGHT ON THE EVENING OF ‘M’ILLUMINO DI MENO’
The first of March this year will once again feature “M’ illumino di Meno”, (“With a Little Less Light!”) the day focusing on energy conservation and sustainable lifestyles which was the 2005 brainchild of Caterpillar and Rai Radio 2.
La Preséf, the Michelin-starred restaurant at La Fiorida, will once more align itself to the symbolic yet pragmatic meeting of minds with which the popular radio programme raises the awareness of listeners and encourages everyone to turn off all unnecessary lighting.
It’s a successful and increasingly widespread initiative which this year will see Michelin Italia join forces and will be adopted by a host of other Italian Michelin-starred restaurants incorporated within the highly-prestigious Guida Rossa.
“M’illumino di Meno” in 2019 will be dedicated to a “rotating” economy: the imperative is to re-use materials, to reduce waste, and as far as possible to banish the “end-of-life” of things. It’s a philosophy which is at the very heart of the farming culture on which each and every product is conceived and developed at La Fiorida, from breeding to cultivation, from home-based production to the kitchen itself, and one that is handed down through the generations by organising regular Educational Farming initiatives for the little ones.
Wholeheartedly embracing the very spirit of the day, Chef Gianni Tarabini has come up with a splendid formula for the occasion hosted at La Présef: a special candle-lit dinner, with dishes sourced from “zero metres”, the result of produce and ingredients coming from the very shortest of supply chains, namely the Azienda Agricola de La Fiorida, and with strictly zero waste: “squander and throw away as little as possible,making the most of every single part of each raw material is the accepted wisdom forming part of farming culture and is genuinely reflected in our kitchens. It’s a reinforcement of natural sustainability and respect for all that Nature provides and something we observe on a daily basis here at La Fiorida and La Preséf. For this ‘M’illumino di Meno’ we intend to make this message ever more manifest and redolent” affirms Chef Tarabini.
